Pear Pie with Almonds and Honey



Ingredients
400 g pears
1 tbsp lemon juice
50 g butter
100 g honey
1 packet vanilla sugar
3 eggs
pinch of salt
lemon zest
1/2 tsp cinnamon
150 g flour
1.5 tsp baking powder
200 g almonds

For the filling:
3 pears
1 tbsp sugar
1 tbsp powdered sugar
Almonds

Preheat oven to 180 degrees Celsius. Grease a baking pan and dust with flour or semolina. To prepare the pastry, peel the pears, cut into quarters, remove the cores, and cut into small cubes.

 Place the pears in a saucepan, preferably nonstick, add 1 tablespoon of lemon juice, and simmer over low heat until soft. Remove from heat, carefully drain any excess liquid, purée with a blender or mixer, and cool. You should have 300 g (9.8 oz) of pears.

Cream the butter with the honey and vanilla sugar. Separate the egg whites from the yolks and beat with a pinch of salt. Gradually whisk the yolks into the butter and honey. Add the lemon zest, cinnamon, and pear puree.

Mix the flour with the ground almonds and baking powder and pour it over the butter mixture. Top with the whipped egg whites and gently fold everything together.

Pour the dough into the pan and smooth it out. To prepare the filling, wash and peel the pears, cut each into quarters, remove the core, and slice. Arrange the pears on the dough in a sunray pattern, press them lightly, and sprinkle with sugar.

Place the pie in the oven and bake for 50 minutes. Check for doneness with a wooden skewer after 10 minutes; it may take a little less or a little more. Remove the pie from the oven and let it cool in the pan. Transfer the pie to a serving platter, dust with powdered sugar, and sprinkle with chopped almonds.
