Ingredients
Cottage cheese 400 g
Egg 1
Sugar 1/2 tbsp
Pinch of salt
Pinch of vanilla
Flour 1 cup
Raisins 1/2 cup
Jam 2 tbsp
Breadcrumbs
Pour boiling water over the raisins for 5 minutes, drain, dry on a paper towel, chop, and mix with the jam to form a sticky filling.
Press the cottage cheese through a sieve, mix with the egg, salt, sugar, and vanilla, add the sifted flour, and knead the dough. If it sticks to your hands, add a little more flour. Divide the dough into small pieces, grease your work surface and hands with vegetable oil, form a flatbread from a piece of dough, add a little filling to the center, pinch the edges, form into a round syrniki, and roll in breadcrumbs.
Fry the syrniki on both sides until golden brown in vegetable oil, then place them on a paper towel to absorb excess oil.
