Curd Cookies



Ingredients
Cottage cheese 400 g
Margarine 200 g
Flour 480 g
Sugar to taste
Baking soda 1/2 tsp
Salt to taste

Chop the margarine, then grate it on a coarse grater, mix it with the grated cottage cheese, and add salt. Next, mix the mixture with flour and baking soda, and knead the dough. Roll it out and cut it into circles. Dip one side of each circle in sugar, then fold it in half so that the sugar is on the inside.

Dip this semicircle in sugar again, and fold it as before. Score the edges with scallops to resemble feathers. Dip the resulting cookies in sugar again, then place them sugar-side up on a baking sheet and bake until done.
