Fruit Cake



Ingredients
Flour 3/4 cup
Eggs 3
Brown sugar 3/4 cup
Baking soda 1/2 tsp
Baking powder 1/4 tsp
Salt 1/2 tsp
Vanilla
Dried apricots 1/2 cup
Prunes 1/2 cup
Dates 3/4 cup
Dried cherries 1/4 cup
Figs 1/2 cup
Walnuts 3 cups

Preheat oven to 150 C (300 F). Combine flour, salt, baking powder, and baking soda. Add dried fruit, sugar, and nuts, and mix thoroughly with your hands.

Whisk the eggs and vanilla with a mixer until pale and the mixture has roughly doubled in size. Pour the dry ingredients into the pan and mix thoroughly with your hands until all the dried fruit is coated with a thin layer of batter.

Line a baking pan with parchment paper, transfer the batter into it, press down firmly to ensure there are no air pockets, and bake in a preheated oven for approximately 70-75 minutes. If you're baking two small cakes, reduce the baking time to an hour. If the surface begins to brown quickly, cover with foil. The cake should be golden brown.

Remove from the oven and cool in the pan. Then wrap in parchment paper and store. Use as many dried fruits as you like. For every 3 cups of nuts, you should use 2 1/2 cups of dried fruit.
