Halibut Fish Soup



Ingredients
Halibut (fillet) 450 g
Onion 1
Carrot 1
Green bell pepper 1/2
Potato 1
Dill 30 ml
Egg 1
Sour cream 1/2 cup
Water 8 cups
Olive oil 1 tbsp
Lemon 1
Salt
Pepper

Heat the olive oil in a heavy-bottomed saucepan over medium heat. Add the onion, carrot, and green pepper and sauté until tender and soft, about 3-5 minutes. Then add the water and bring to a boil, then add the fish pieces.

 Cook for 6-7 minutes, then add the potatoes, bring to a boil, then reduce heat, season with salt and pepper, cover, and simmer for 20 minutes.

In a small bowl, whisk together the egg, sour cream, and lemon juice. Pour 1/4 cup of the broth from the saucepan into a separate small bowl. Then combine the broth with the whisked mixture and pour the mixture back into the saucepan. Cook for another 5 minutes.

Add the dill and season with more salt and pepper if needed. Serve hot, with lemon wedges on the side.
