Ingredients
for the dough:
1 cup flour
1 tbsp honey
1/4 tsp salt
110 g butter
1 egg
1 tsp milk
1 tsp cream
For the filling:
1/2 cup oatmeal
1 cup water
4 eggs
1/2 cup sugar
3/4 tsp salt
1 tbsp apple cider vinegar
300 ml honey
4 tbsp butter
1 cup walnuts
Mix the flour, sugar, and salt. Chop the butter into this mixture and rub it with your hands until coarse crumbs form. Beat in the egg, milk, and cream.
Try to hold the dough together; if it's too dry, add more milk. Form the dough into a ball, wrap in plastic wrap, and refrigerate for a couple of hours, or preferably overnight. Remove the dough from the refrigerator 30 minutes before rolling it out.
Dust the surface with flour and roll it out. Place the dough in a round pie pan, forming a rim by folding the edges under the dough. Refrigerate the pan while you prepare the filling. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Cook the oats in water.
Whisk the oats in a blender on the lowest speed. Beat in the eggs (make sure the mixture isn't too hot, as this can cause the eggs to scramble), add the sugar, salt, vinegar, honey, and melted butter. Continue beating at the same speed until smooth.
Pour the filling into the cooled crust and sprinkle with chopped nuts. Bake in a preheated oven. After 15 minutes, reduce the temperature to 175 degrees Celsius and bake for another 25-35 minutes to allow the filling to bake. If the filling begins to darken significantly, cover with foil and return to the oven. Cool the finished pie for about 30 minutes before serving.
