Lemon and Blueberry Casserole



Ingredients
3 eggs
Pinch of salt
1/2 cup sugar
3/4 cup milk
2/3 cup flour
1 tsp vanilla
1 lemon
4 cups blueberries
1 tbsp butter

Preheat oven to 350 degrees F (175 degrees C). Grease a deep frying pan or round cake platter (with removable edges) with butter and sprinkle with sugar. In a bowl, whisk together the eggs, salt, and 1/2 cup sugar.

Add flour, milk, vanilla, lemon zest, and lemon juice. Arrange the berries in the bottom of the dish, and pour the prepared batter on top (or vice versa, as you prefer). Bake for 55-60 minutes. Cool slightly. Remove from the pan, place on a serving platter, and drizzle with lemon juice. Dust with powdered sugar.
