Mushroom and Bacon Burritos


Ingredients
Mushrooms 150g
Cumin 1 tsp
Potatoes 2
Bacon 100g
Onion 1/2
Butter 3 tbsp
Milk 1/4 cup
Ground black pepper 1 tsp
Bell pepper 1/2
Salt to taste
Ground black pepper to taste
Tortillas 7
Garlic 1 clove
Spinach 2 bunches
Eggs 5

Melt the butter in a large skillet over medium heat. Add the chopped onion and potatoes and cook until the potatoes are golden brown. Then add the bell pepper.

Add the mushrooms and cook until softened.

 
Now, rake the vegetables to one side of the pan, and fry the sausage or bacon in the remaining space. The meat should be cooked through. Then, combine the meat and vegetables, add the spices, and mix well.

Add the spinach and cook for about a minute.

In a separate bowl, beat the eggs with the milk.

If your pan is large enough, rake the vegetables and meat to the side and fry the omelet in the same pan (don't forget to add a little oil!). If not, do this in a separate pan.

Then combine with the vegetable and meat mixture. Fill the tortillas with the prepared filling and serve with your favorite sauce.
