Peach and Nectarine Strudel



Ingredients
for the dough:
Flour 250 g
Pinch of salt
Margarine 75 g

For the filling:
Peach 500 g
Nectarine 500 g
Raisins 1 handful
Cottage cheese 380 g
Egg yolk 1
Sugar 100 g
Lemon juice
Almond flakes 50 g
Margarine 30 g

Knead the dough in an enamel bowl, cover with a towel, and let it rest for 1 hour. Pour the lemon juice into the cottage cheese, add the sugar, and add the yolk. Mix thoroughly. Sprinkle the raisins with almond flakes.

Roll out the dough very thinly. Grease the dough with margarine and spread the cottage cheese on top, leaving about 2 cm to the edges of the dough. Top the cottage cheese with raisins and shavings.

Peel and pit the peaches and nectarines. Cut the fruit into small cubes or thin slices. Place them on the cottage cheese. Roll up the 2 cm edges, then form into a roll. Bake in a preheated oven at 200 degrees Celsius, having first greased the pan with margarine. Serve the peach and nectarine strudel with condensed milk and vanilla ice cream.
