Peach Tart with Curd Filling



Ingredients
for the dough:
1 cup flour
1 teaspoon baking powder
1 packet vanilla
1 egg yolk
1.5 tablespoons fructose
100 g butter
3 tablespoons water

For the filling:
500 g cottage cheese
3 eggs
Lime zest
1 packet vanilla
4 tablespoons fructose
Peach

Let's start by preparing the dough. First, mix the dry ingredients: flour, baking powder, vanilla, and fructose. Then add the yolk and butter and knead the dough.

When the dough forms a ball, add a little water. The dough shouldn't stick too much to your hands. Roll into a ball, cover with a napkin, and refrigerate for 40 minutes.

Let's make the nachika. If you like a strong curd flavor, this is easy. Mix all the ingredients, adding just a little zest! But if you want a more delicate and airy filling, separate the yolks from the whites. Puree the first with fructose, and beat the second thoroughly with a mixer (do each in separate bowls).

Then add the yolks with fructose and the packet of vanilla to the cottage cheese, then add the beaten whites. Gently (!) mix everything with a fork until smooth.

Preheat the oven to 180°C (350°F). Remove the dough from the refrigerator and roll it out in a greased baking pan. Pour the curd filling over it, and arrange the peaches on top. Bake for 20 minutes.

Serve a slice of this tart with a scoop of ice cream or lemon sorbet.
