Flour 250 g
Baking powder 2 tsp
Cardamom 1/4 tsp
Salt 1/4 tsp
Sweet cream butter 70 g
Sugar 125 g
Eggs 2
Olive oil 50 g
Vanilla extract 1.5 tsp
Lemon zest
Plums 4
Preheat oven to 180°C. Grease a baking pan with butter, line the bottom with parchment paper, and grease again with butter. Sift together the flour, baking powder, salt, and cardamom.
In a food processor on medium speed, beat the butter and sugar until fluffy and smooth. Add the eggs, vanilla extract, zest, and olive oil. At low speed, begin mixing in the flour. Pour the smooth dough into the baking pan. Arrange the halved plums on top, pressing them down slightly.
Approximate baking time: 35-40 minutes (test with a wooden skewer).
Serve chilled.
