Sticky buns with cinnamon and walnuts



Ingredients
for the dough:
4 egg yolks
1 egg
2 tbsp sugar
2 tbsp brown sugar
6 tbsp butter
4 tbsp cream cheese
3/4 cup sour milk
2.25 tsp fresh yeast
3.5 cups flour
1.25 tsp sea salt

For the filling:
60 g butter
3/4 cup brown sugar
1.5 tbsp cinnamon
1/2 tsp nutmeg

For the syrup:
110 g butter
1.25 cups brown sugar
1/4 cup honey
1 tbsp cinnamon
1 vanilla tbsp
Walnuts 1.5 cups
Sugar syrup 2 tbsp

Warm the sour milk (do not bring to a boil). Add the granulated sugar and yeast and let sit for 5-10 minutes to allow the yeast to ferment.

In a stand mixer, beat the butter, cream cheese, egg and yolks, and brown sugar. While continuing to beat, add the prepared sour milk yeast.

Add 2 cups of flour and salt and continue mixing. Once all ingredients are thoroughly mixed, remove the blade from the mixer, add the remaining 1.5 cups of flour, and knead the dough with your hands for 3-4 minutes. Form the dough into a ball and let it rest at room temperature for 2-3 hours (the dough should double in size).

 Prepare the filling: Using a fork, cream the butter with the brown sugar, cinnamon, and nutmeg. Stir until smooth. In a small saucepan, bring the butter, brown sugar, honey, and syrup to a simmer over medium heat.

Stir occasionally until the sugar is completely dissolved. Remove from heat, add the cinnamon and vanilla, and pour the mixture into the bottom of a baking dish. Sprinkle with chopped walnuts (or pecans).
