Cornflake and Coconut Cookies



Ingredients
2 cups cornflakes
150 g sugar
100 g coconut flakes
1/4 tsp 9% vinegar
3 egg whites

Preheat oven to 175 degrees Celsius. Line a baking sheet with parchment paper. Separate the egg whites from the yolks. Beat the egg whites, sugar, and vinegar in a mixer or blender until stiff peaks form, about 8-10 minutes.

Whisk the cornflakes in a blender until crumbly. Add the cornflakes and coconut flakes to the beaten egg whites and sugar. Mix with a spoon.

Spoon the resulting batter onto the parchment paper. Place in a preheated oven for 18-20 minutes, or bake until golden brown. When the cookies are done, carefully remove them from the parchment and let them cool completely. Hot cookies are fragile and elastic, so let them cool completely.
