Reserve ½ cup pasta water. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a pan and cook for 5–6 minutes per side until golden and cooked through (74°C/165°F internal temp). Rest, then slice. In the same pan, melt butter and sauté mushrooms for 5–6 minutes until browned. Add garlic and cook for 1 minute. Pour in cream and simmer for 3–4 minutes, then stir in Parmesan until smooth and creamy. Add cooked pasta to the sauce and toss well, adding a bit of reserved pasta water if needed.
