Ingredients
1 eggplant
300 g mushrooms
1 onion
3 cloves garlic
Mayonnaise
1 egg
Salt
Pepper

Start preparing the appetizer by choosing a frying pan. It's best to choose one with a thin bottom to avoid stewing. If you don't have one, fry the ingredients over high heat. Finely chop the onion and chop the garlic. Fry the onion and garlic in vegetable oil until translucent.

Wash the eggplant, trim the ends, and cut into strips. Add the eggplant to the onion. Fry over high heat to remove any excess juice.

Quickly prepare the mushrooms. Cut them into large strips. Add the mushrooms to the pan. Add salt and pepper to taste. Fry the eggplants with mushrooms for about 5-8 minutes.
Serve warm. Add mayonnaise and a hard-boiled egg. This is a great combination for fried eggplants with mushrooms.
