Ingredients
Butter 225g
Sugar 1 cup
Flour 300g
Baking powder 1 tsp
Salt 1/2 tsp
Raspberry jam
Icing sugar
These are traditional cookies from the Isle of Anglissie (Wales). The British treat them at Christmas and New Year.
Preheat the oven to 180°C (350°F). Cream the butter and sugar until creamy, then stir in the flour, salt, and baking powder.
Roll the dough with a rolling pin to a thickness of 6mm and cut out circles with cookie cutters. Make a small hole in the center of half the cookies. You will need the smallest cookie cutter for this.
Arrange the cookies on a baking sheet and bake for 10 minutes; the cookies will rise and turn golden. Cool the finished cookies and assemble the different sections, having first coated the surface with raspberry jam. Dust with powdered sugar.
