Ingredients
for the dough:
Cottage cheese 150 g
Flour 2 cups
Milk 5 tbsp
Vegetable oil 5 tbsp
Baking powder 16 g
Pinch of salt
Sugar 1/2 cup
For the filling:
Apple 500 g
Sugar 3 tbsp
Egg liqueur 100 ml
Lemon juice 2 tbsp

First, make the dough. Mix the cottage cheese, milk, vegetable oil, salt, and sugar in a bowl. Add the flour and baking powder. If your cottage cheese is dry, you'll likely need less flour. Or add a couple more tablespoons of milk. The dough should be soft but hold its shape.
Put the dough in the refrigerator to rest and then make the filling. Peel and dice the apples. Place them in a saucepan, add lemon juice, and mix well. Then add sugar and egg liqueur. Bring to a boil and simmer for 5-10 minutes.
Once the filling has cooled, you can move on to the next step. Roll out the dough and cut it into 9 x 12 cm rectangles. Place 1 tablespoon of apples on one half of the rectangle, and make several slits in the other half. Brush the edges of the dough with beaten egg.
Now close each pocket and press the edges. The egg will help them seal securely. Now we've closed all the pockets, brushed them with the same beaten egg, and baked them on a baking sheet in the oven (200°C).
