Baked Ham and Mushroom Sandwiches


Ingredients
16 slices toast
8 slices ham
2 tomatoes
200 g mushrooms
4 eggs
150 g cheese
1 tbsp butter
Salt to taste
Pepper to taste
Parsley

Slice the mushrooms. Fry in a frying pan with vegetable oil. Grate the cheese.


Using a sharp knife, cut out the crumb from 8 slices of bread. This will create the bread "rims" from the crusts. Place 8 whole slices of bread on a baking sheet, and place the bread "rims" on 4 of them.


Fill them with the fried mushrooms. Season with salt and pepper.

 
Then top with sliced tomato slices and sprinkle with grated cheese.

Place 2 slices of ham on each of the remaining 4 slices of bread, then top with the remaining 4 bread "rims" (without the crumbs).

Place sliced tomato slices inside the rims and crack an egg into each sandwich. Season with salt and pepper. Place the baking sheet with 8 sandwiches in a preheated oven and bake at 180°C until the eggs are set and the cheese is melted. Sprinkle with herbs when serving.
