Banana Oatmeal Cake



Ingredients
200 g flour
330 g rolled oats
1/4 tsp salt
1 tsp baking soda
130 g butter
180 g brown sugar
2 eggs
1 cup banana
1 tsp vanilla extract

For the crumble topping:
1/2 cup rolled oats
1/3 cup brown sugar
2 tbsp butter
2 tbsp walnuts
1/2 tsp cinnamon

Grease a 20x20 cm baking pan with 0.5 tbsp butter and line it with parchment paper. For the dough, combine the flour, oats, baking soda (dissolved!), and salt in a bowl and set aside.

 In another bowl, beat the remaining butter with the brown sugar. Add the eggs one at a time, then a cup of mashed bananas and vanilla essence.

Pour the dry ingredients into the banana-cream mixture, mixing until smooth. Pour the mixture into a baking pan.

Preheat the oven to 180°C. For the crumble topping, combine the oats, brown sugar, nuts, cinnamon, and melted butter in a small bowl. Spread the mixture evenly over the top of the dough. Place the pan in the oven and bake for 40-45 minutes.
