Ingredients
Flour 1.3 cups
Cocoa powder 3/4 cup
Baking soda 1/2 tsp
Salt 1/2 tsp
Sweet cream butter 1/2 cup
Sugar 1 cup
Egg 1
Milk 1/2 cup
Vanilla extract 1 tsp
Marshmallows 12
For the chocolate glaze:
Sugar 2 cups
Sweet cream butter 4 tbsp
Cocoa powder 1/4 cup
Milk 1/4 cup
Vanilla extract 1/4 tsp
Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside. In a bowl with an electric mixer, beat the butter and sugar until light and fluffy, about 2 minutes. Add the egg, milk, and vanilla and beat until well combined. Add the flour mixture and mix on low speed until combined.
Using a tablespoon or ice cream scoop, drop the batter onto a baking sheet, spacing it about 2 cm apart. Bake the cookies for 10 to 12 minutes.
Remove the baking sheets from the oven and place a marshmallow half in the center of each cookie, pressing down slightly. Return to the oven and continue baking until the marshmallows begin to melt, 2 to 2 1/2 minutes. Transfer the cookies to a wire rack to cool completely before frosting.
To make the glaze: Place the sugar in a medium bowl and whisk together the butter and cocoa powder. Add milk and vanilla, whisk until well combined. Spoon about 1 tablespoon of glaze onto each marshmallow and spread evenly throughout.
