Ingredients
for the dough:
2.25 tsp fresh yeast
1 tsp sugar
1/4 cup water
1 egg
1/2 cup milk
1/4 cup sugar
1 tsp salt
2.5 cups flour
220 g butter
1 egg white
For the filling:
2 tbsp butter
2 apples
3/4 cup sugar
1.25 tbsp flour
1/2 tbsp cinnamon
1/2 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla
Dissolve the yeast in warm water with a teaspoon of sugar. Let it sit for 10 minutes to ferment. Once the yeast is ready, beat in the egg, milk, sugar, and salt. Whisk and set aside.
Chop the butter into the flour and rub it in with your hands until it forms fine crumbs. Pour in the yeast mixture and knead the dough. Place the dough on a cutting board and knead it with your hands. Roll the dough into a rectangle. Fold it in thirds. Turn it over and roll it out again. Repeat this process three more times, then divide the dough into two parts, wrap them in plastic wrap, and refrigerate overnight.
