Ingredients
3 egg whites
2 egg yolks
30 g powdered sugar
60 g sugar
50 g flour
Whisk the egg whites (3) until soft, then add half the sugar (30 grams) and continue whisking until the sugar dissolves and the mixture becomes smooth and shiny.
Combine the remaining sugar (30 grams) with the yolks (2) and whisk until light and fluffy. Carefully fold the egg whites into the yolks, sift in the flour (50 grams), and mix gently from the bottom up, retaining air.
Transfer the dough to a pastry bag or zip-top bag and pipe 10-12 cm long sticks onto a baking sheet lined with parchment paper. Sprinkle with 3 grams of powdered sugar twice through a sieve and let sit for 10-15 minutes. Bake at 190-200 degrees Celsius (350-400 degrees Fahrenheit) until golden brown. This will take 10-12 minutes.
