Cold Fresh Vegetable Soup



Ingredients
2 cucumbers
3 tomatoes
1 green bell pepper
2 cloves garlic
1 green onion
1 bunch greens
1 tbsp tomato paste
Salt to taste
2 tbsp wine vinegar
2 tbsp olive oil
Croutons
Tabasco sauce to taste

Chop the vegetables and place in a tureen. Finely chop the garlic or press it through a garlic press. Finely chop the greens and add to the vegetables.

Add the wine vinegar, olive oil, Tabasco sauce, salt, and tomato paste diluted with water. You can use cold broth instead of water. For a heartier soup, add boiled chicken or lean ham.

Refrigerate the finished soup for 1-2 hours. Sprinkle the soup with croutons before serving.
