Delicate Curd and Berry Casserole



Ingredients
Cottage cheese 500 g
Eggs 3
Sugar 100 g
Butter 50 g
Semolina 50 g
Icing sugar 70 g
Cranberries 200 g
Red currants 100 g
Baking powder 2 tsp

Separate the egg whites from the yolks. Add the cottage cheese, semolina, and baking powder to the yolks and mix well. Then add the sugar and softened butter and mix again. Beat the chilled egg whites until stiff, gradually adding the powdered sugar. Gently fold the beaten egg whites into the curd mixture with a whisk.

Pour half the curd mixture into the pan, then add the berries, and top with the remaining curd mixture. Smooth it out. Preheat oven to 180 degrees Celsius and bake for 30 minutes. Cool the casserole slightly and serve warm.
