Eggplant Appetizer with Processed Cheese


Ingredients
1 eggplant
100 g processed cheese
1 egg
Basil to taste
Salt
Spices
Vegetable oil

Cut the eggplants into slices about 4-5 cm wide.

Carefully cut out the centers with a knife. Place the eggplants in a preheated frying pan and fry over high heat on both sides.


In a separate bowl, combine the grated cheese, egg, and basil. Season this filling with salt and spices. Mix everything well.


Once the eggplants are fried, fill them with the filling. A fork is a good way to do this. Try to fill the eggplants completely. Now it's important not to overcook the eggplants. Turn them over periodically and make sure the filling sets. This will take about 3-4 minutes. Then turn off the heat, cover the pan with a lid, and leave the bombs alone for a couple more minutes. During this time, they will soften and won't overcook.


Serve warm, optionally with a drizzle of mayonnaise.
