Ingredients
Ham 150g
Green onion 1 bunch
Potatoes 1000g
Milk 1/2 cup
Olive oil 2 tbsp
Salt to taste
Pepper to taste
Parmesan cheese 50g
Eggs 8
Peel the potatoes, cut them into thin slices, and place them in a frying pan (preferably a cast iron pan) with olive oil. Sprinkle with salt and pepper and cook for 10 minutes over medium heat, stirring occasionally until all the potato slices are evenly browned. Preheat oven to 200°C.
While the potatoes are cooking, slice the green onions and separate the white parts from the green ones. Add the white parts to the frying pan with the potatoes. Slice the ham and add it to the pan.
In a deep bowl, combine the eggs, milk, and grated Parmesan cheese. Whisk thoroughly, and when the mixture is smooth, add the green parts of the chopped onion.
Once the potatoes have softened slightly (after 10 minutes), pour the beaten eggs into the pan. Make sure the liquid is evenly distributed. Continue cooking the frittata, without stirring, for another 1-2 minutes, or until the edges are set.
Transfer the pan to the oven and cook for another 20 minutes. Check the dish after 15 minutes, as it may burn. Let the frittata rest for 5 minutes before serving.
