Whole Roasted Cauliflower



Ingredients
1 cauliflower
1 tbsp vegetable oil
300 ml Greek yogurt
1 lime juice
Ground red pepper to taste
1 tbsp cumin
1 tbsp garlic
1 tsp curry powder
1 tsp ground black pepper
2 tsp salt

Preheat oven to 200°C and grease a baking sheet with oil. Thoroughly wash the cauliflower and remove any green leaves.

In a bowl, mix the yogurt with the lemon juice, chili powder, cumin, garlic, curry powder, salt, and pepper. Place the cauliflower in the bowl and coat with the marinade.

Bake in the oven for 30-40 minutes. The marinade will create a crust on the surface of the cauliflower. Let the cauliflower cool for 10 minutes and serve with a green salad.
