Solyanka (Assorted Soup)



Ingredients
Beef broth 2000 ml
Beef 300 g
Pickled cucumber 1 pc
Olives 100 g
Smoked meat 200 g
Uncooked smoked sausage 200 g
Onions 2 pcs
Tomato paste 4 tbsp
Sausages 6 pcs
Spices
Dill
Lemon
Sour cream

Boil the broth. Remove the boiled beef and cut into cubes. Add to the boiling broth. Dice the cucumbers. Add to the broth. Simultaneously, add half a jar of olives. Let simmer for 15 minutes.

Meanwhile, chop all the smoked meats and sausages. Add to the cucumbers and olives.

Make the sauté. Dice the onion and fry in vegetable oil. Add 2 tablespoons of flour and fry with the onion. Add the tomato paste. The sauté is ready.

Add the sauté to the pan. Sprinkle with the spices and cook for 5 minutes. Add chopped dill (or you can leave it out if you don't have it), and let it simmer with the dill for 1-2 minutes. Cover and let it steep for 30 minutes. Serve with a lemon wedge and a dollop of sour cream.
