Thick Cheese and Vegetable Soup



Ingredients
2 tablespoons butter
0.5 onion
1 cup carrot
4 cloves garlic
1/2 teaspoon red pepper flakes
4 cups chicken broth
2 potatoes
1 tablespoon flour
1/2 cup water
2/3 cup milk
2 cups broccoli
1 cup corn
2 cups cheese

Melt the butter in a large saucepan, add the finely chopped onion and carrot, and simmer until soft. Press the garlic and add the red pepper flakes. After 1-2 minutes, pour in the broth and bring to a boil along with the diced potatoes.

 Once the broth begins to boil, reduce the heat to medium and cover. Keep the lid on until the potatoes are tender. Mix the flour and water and pour into the pan.

Simmer until the soup begins to simmer. Then pour in the milk, broccoli florets, and corn. Cook until the broccoli is tender and the soup is heated through.

Stir in the cheese and let it melt. Serve the soup warm with extra cheese.
