🛒 Ingredients
🍗 300 g ground chicken
🧂 Salt & black pepper, to taste
🧄 2 garlic cloves, minced
🥚 1 small egg
🌿 3 tbsp fresh dill, chopped
🌿 2 tbsp fresh parsley, chopped
🍞 3 tbsp breadcrumbs
🫒 1 tbsp olive oil (for cooking)
For the Tzatziki:
🥒 ½ cucumber, finely grated
🥛 1 cup (200 g) Greek yogurt
🧄 1 garlic clove, minced
🍋 1 tbsp lemon juice
🫒 1 tbsp olive oil
🌿 1 tbsp fresh dill
🧂 Salt to taste
For Serving:
🍚 1 cup cooked white rice
🥒 ½ cucumber, sliced
🍅 6 cherry tomatoes, halved
🧅 ¼ red onion, thinly sliced
🌿 Extra dill for garnish
👩🍳 Instructions
In a bowl, mix ground chicken, egg, garlic, breadcrumbs,
parsley, dill, salt, and pepper until just combined.
Form into 8–10 small meatballs (about golf-ball size).
Heat olive oil in a skillet over medium heat; cook
meatballs for 10–12 minutes, turning occasionally, until
browned and fully cooked (internal temp 74°C/165°F).
For tzatziki, squeeze excess water from grated cucumber,
then mix with yogurt, garlic, lemon juice, olive oil, dill, and
salt. Chill until ready to serve.
Arrange cooked rice on a plate, place meatballs on top.
Add sliced cucumber, cherry tomatoes, and red onion on
the side.
Spoon tzatziki generously over or beside the meatballs
and drizzle with a little olive oil. Garnish with fresh dill.
