Elegant Blueberry Cream Cheese Egg Rolls 🥮
Ingredients:
- 8 ounces cream cheese, softened
- 1 cup fresh blueberries
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 12 egg roll wrappers
- 1 tablespoon water (for sealing)
- 2 tablespoons vegetable oil (for frying, if not baking)
Directions:
1. In a medium bowl, mix the softened cream cheese,
granulated sugar, vanilla extract, and lemon zest until
smooth. Gently fold in the fresh blueberries.
2. Lay out an egg roll wrapper on a clean surface with
one corner pointing towards you. Place about 2
tablespoons of the cream cheese mixture in the center of
the wrapper.
3. Fold the bottom corner over the filling, then fold in the
side corners, and roll it up tightly. Seal the edge with a bit
of water. Repeat with the remaining wrappers and filling.
4. To fry: Heat vegetable oil in a skillet over medium heat
and fry the egg rolls for 2-3 minutes per side until golden
brown. To bake: Preheat oven to 400°F (200°C), place
egg rolls on a baking sheet, brush with oil, and bake for
15-20 minutes, flipping halfway.
5. Let the egg rolls cool for a few minutes before serving.
