No-Bake Strawberry Lemon Cheesecake 🍋

 



Ingredients:  

- 1 1/2 cups graham cracker crumbs  

- 1/4 cup granulated sugar  

- 1/2 cup unsalted butter, melted  

- 2 packages (8 oz each) cream cheese, softened  

- 1 cup powdered sugar  

- 1 tablespoon lemon zest  

- 1/4 cup fresh lemon juice  

- 1 cup fresh strawberries, chopped  

- 1 cup whipped cream or whipped topping  


Directions:  

1. In a medium bowl, mix the graham cracker crumbs,

granulated sugar, and melted butter until well combined.

Press the mixture firmly into the bottom of a 9-inch

springform pan to form the crust.  

2. In a large bowl, beat the softened cream cheese with

an electric mixer until smooth. Gradually add the

powdered sugar, lemon zest, and lemon juice, mixing

until creamy.  

3. Gently fold in the chopped strawberries and whipped

cream until evenly distributed.  

4. Pour the cream cheese mixture over the prepared crust,

spreading it evenly. Smooth the top with a spatula.  

5. Cover the pan with plastic wrap and refrigerate for at

least 4 hours or until set.  

6. Once chilled, remove from the pan, slice, and serve.

Tips:  

- For a fruity twist, substitute raspberries or blueberries

for the strawberries to create a mixed berry version.  

- Enhance the flavor by adding a layer of strawberry jam

on top before chilling for extra sweetness.  

- Serve with fresh lemon slices or a dollop of whipped

cream for a lighter, more refreshing presentation.
