Ruby Blood Orange Cheesecake Bombs with Citrus LavaCenter



Ingredients

For the Cheesecake Filling:

8 oz cream cheese, softened

1/3 cup powdered sugar

1 tsp blood orange zest

1/2 cup heavy cream, whipped to stiff peaks

For the Citrus Lava Center:

1/2 cup blood orange juice, strained

1 tbsp granulated sugar

1 tsp cornstarch

1 drop red food coloring (optional)

For the Ruby Mirror Glaze:

1/2 cup granulated sugar

1/4 cup sweetened condensed milk

1/2 cup white chocolate chips

1 tsp gelatin powder bloomed in 2 tbsp water

2 tbsp blood orange juice

For Garnish (optional):

Candied blood orange peel

Fresh mint sprig

Directions

Simmer blood orange juice and sugar in a small
saucepan over medium heat. Whisk in cornstarch and
cook until thickened to a gel consistency.

Pour the juice mixture into small sphere silicone inserts
and freeze for 2 hours until solid.

Beat cream cheese, powdered sugar, and zest until fluffy.
Fold in the whipped heavy cream until combined.

Fill semi-sphere silicone molds halfway with cheesecake
mixture. Press a frozen citrus lava center into each and
top with more cheesecake mixture, smoothing the
surface.

Freeze the molds for at least 6 hours until completely
firm.

For the glaze, bring sugar, condensed milk, and blood
orange juice to a simmer. Remove from heat and stir in
bloomed gelatin and white chocolate chips until glossy.

Blend and strain the glaze. Let it cool to 90°F.

Unmold the frozen cheesecake bombs onto a wire rack
and pour the ruby glaze over them.

Let the bombs thaw in the refrigerator for 1 hour to allow
the center to return to a lava-like state before serving.
