Double Cheese Quinoa Casserole



Ingredients
2 cups Quinoa
2 cups Vegetable broth
2 tsp Italian herbs
2 tbsp Butter
2 tbsp Flour
1.5 cups Milk
0.5 cups Cottage cheese
1 cup Parmesan cheese
1 cup Mozzarella cheese
4 cups Cherry tomatoes
1 tsp Ground black pepper

Preheat oven to 425°F (210°C) and grease a baking dish.

Pour vegetable broth or water into a saucepan and add the quinoa. Bring to a boil, then simmer for 15 minutes, until the water is absorbed.

Remove from heat and season with salt and pepper.

 In a large skillet over medium heat, melt the butter, add the flour, and whisk vigorously.

In a blender, combine the milk and cottage cheese, then add them to the skillet with the butter and flour. Add ½ cup of Parmesan cheese and whisk until completely melted. Remove from heat.

Add the tomatoes, quinoa, and sliced mozzarella balls. Pour everything into the prepared baking dish. Sprinkle the casserole with the remaining Parmesan cheese and bake for 20 minutes.

Let the casserole cool for 2 minutes before serving. Garnish with basil, if desired.
