Ingredients
2 green apples
1/2 cup raisins
150 g pancake flour
150 g butter
150 g sugar
2 eggs
3 tbsp Calvados
1 tbsp lemon juice
1 tbsp lemon zest
1 packet vanilla sugar
3 tbsp cinnamon
a pinch of salt
3 tbsp pine nuts
Soak the raisins in boiling water for 5 minutes. Drain and soak in apple vodka for 30 minutes. Cut the apples into thin slices and sprinkle with lemon juice.
Heat 1 tbsp butter in a frying pan, add the apples, and sprinkle with sugar. Fry, stirring, for 5-7 minutes. Add the raisins, Calvados, and cinnamon, and simmer for another 7 minutes, until the apples are soft. Cool the apples.
For the batter, beat the softened butter with the sugar and vanilla. Add the eggs, one at a time, the lemon zest, and the flour with a pinch of salt. Place the apples and raisins in a greased 24 cm diameter pan. Pour the batter over the apples and smooth it out. Bake in an oven preheated to 180°C (350°F) for about 45 minutes.
Cool the finished pie in the pan for about 30 minutes. Carefully invert the pie onto a plate. Sprinkle with toasted pine nuts and powdered sugar.
