Ingredients
For the base:
240 g chocolate cookies
8 tbsp butter
1/2 cup sugar
1/4 tsp salt
For the filling:
225 g cream cheese
50 g brown sugar
220 g dark chocolate
90 g cocoa powder
Vanillin to taste
For the frosting:
7 egg whites
1 cup powdered sugar
3/4 packet vanilla sugar
Crush the graham crackers in a food processor until fine crumbs form. Mix with melted butter, sugar, and salt. Preheat oven to 290 degrees Celsius. Beat the cheese, sugar, flour, and zest with a mixer. Add vanilla, eggs, and yolks, beating on low speed. Pour the mixture into a greased pan and press down firmly. Bake for about 12 minutes in the oven, remove, and cool completely before filling.
Melt the chocolate in the microwave. In a bowl, combine the cream cheese, sugar, and vanilla. Beat until smooth (don't worry if the sugar hasn't dissolved). Add the cocoa powder and mix again. Slowly begin pouring the melted chocolate into the whipped cream cheese. Beat until smooth. Spread the filling evenly over the base and refrigerate overnight.
Make the custard just before serving. Beat the egg whites with a whisk until stiff and fluffy, gradually adding the powdered sugar and vanilla. Beat the custard for at least 20-25 minutes. The finished custard should hold together well when held up by the whisk. Spread the cream over the cooled chocolate filling.
