Ingredients
4 eggs
4 tablespoons flour
4 tablespoons sugar
1/2 teaspoon baking powder
7 apples
2 tablespoons sugar
Cinnamon
Vanillin
Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper. Peel and core the apples, finely grate them, squeeze the juice well through cheesecloth, mix with sugar and cinnamon or vanilla, and spread the apples in an even layer on the parchment paper.
Whisk the yolks with sugar until pale, sift the flour and baking powder over the top, and mix gently. Beat the egg whites until soft peaks form, then fold in the yolks. Pour the batter evenly over the apples.
Bake for 12-15 minutes, then turn the cake out onto a towel, apple-side up. Carefully remove the parchment paper, and immediately roll the cake up using the towel. Cool the roll and cut into pieces.
