Ingredients
For the base:
Cookies 300g
Butter 150g
For the filling:
Cream cheese 500g
Sugar 150g
Eggs 200g
Chocolate 1 tsp
Vanilla sugar 150g
Cherries 150g
Nuts
Mix the crushed cookies and butter in a bowl. Spread the mixture in the bottom of a baking dish. Bake at 175°C (350°F) for 8 minutes. Let cool.
In another bowl, beat the cream cheese until smooth, add the sugar and vanilla, and mix well. Add the eggs, beat slowly, then add the melted chocolate, mixing well again.
Carefully fold in the cherries and nuts, pour into the pan over the baked base, and bake at 175°C (350°F) for 50-55 minutes. Let cool to room temperature and refrigerate.
Meanwhile, melt the chocolate in a saucepan over a double boiler, add the butter, let cool slightly, and pour this sauce over the cooled cheesecake. Refrigerate the cheesecake until serving.
