Cheesecake with a Chocolate Chip Cookie Crust



Ingredients
For the crust:
255g chocolate chip cookies
85g butter

For the filling:
225g cream cheese
2 tbsp flour
A pinch of salt
270g sugar
3/4 cup sour cream
4 tsp vanilla
4 eggs
1 cup chocolate chip cookies

Preheat the oven to 190°C (350°F). Line a pie pan with parchment paper. Crumble the cookies and mix with softened butter. Spread the cookie mixture on the bottom of the pan. Cover with plastic wrap and press down with your hands, compacting it. Bake for 12 minutes and remove from the oven to cool.

In a mixer, beat the cottage cheese, flour, and salt until smooth and lump-free. It's crucial that the curd mixture is lump-free. Add sugar, sour cream, and vanilla and whisk. Beat in the eggs and add the chocolate cookie crumbs. Pour the filling onto the cooled base.

Bake at 150 degrees Celsius (300 degrees Fahrenheit) for about 60-70 minutes, until the mixture has a jelly-like consistency. Cool completely. Refrigerate for a couple of hours, or preferably overnight.
