Ingredients
3 eggs
3 tablespoons flour
1 banana
50 g walnuts
1/2 teaspoon baking powder
2 tablespoons sugar
vanilla essence
For the filling:
400 g cottage cheese
1 egg
100 g sugar
3 tablespoons milk
Icing sugar
Filling: Whisk the soft cottage cheese, egg, sugar, and milk. Pour the curd mixture into a baking pan lined with parchment paper and smooth it out. Set aside.
Separate the whites from the yolks. Beat the yolks for a minute or two, add the sugar and vanilla, and beat for another three minutes. Chop the nuts with a knife (or in a blender) and combine with the pureed banana. Using a spoon, fold this puree into the yolks. Add the baking powder and sifted flour. You can also mix it at low speed with a mixer.
Whip the egg whites to medium peaks and gently fold them into the batter, a little at a time. Spoon the batter evenly over the top of the curd mixture, smoothing it out slightly if necessary, and bake for 15-20 minutes at 180°C (350°F).
Dust a towel with powdered sugar, turn the cake over onto the towel, and fold it over the curd filling.
