Ingredients
Cookies 50g
Butter 2 tbsp
Cream Cheese 120g
Sour Cream 120g
Egg 1
Icing Sugar 60g
Orange Juice 2 tbsp
Mix the cookie crumbs with the butter. Pour the mixture into the molds, pressing it into the bottom to form the cheesecake base.
Whisk the cheese and sour cream at low speed. A few seconds is enough to achieve a smooth consistency. Don't over-whisk to avoid creating too many air bubbles, which can cause the cheesecake to crack.
Add the powdered sugar and egg, whisk again until smooth. Then add the orange juice and mix gently. Pour into the molds. Microwave at 700W for about 2 minutes. Remove when the center just begins to bubble.
The cheesecake will be jiggly in the center when finished, but will set as it cools. Let cool to room temperature, then refrigerate for 1.5-2 hours until completely chilled.
Garnish as desired (cocoa powder, berries).
