Ingredients
For the sponge cake:
5 eggs
1 cup flour
1 cup sugar
Baking powder
Vanillin
Red food coloring
For the frosting:
300 ml 35% cream
250 g condensed milk
1.5 bananas
140 g white chocolate
1.5 tbsp gelatin
Yellow food coloring
150 ml strawberry syrup
For the glaze:
250 g mascarpone cheese
100 g 35% cream
150 g powdered sugar
Pink food coloring
Preparing the sponge cake: separate the whites from the yolks, beat the whites with a small amount of sugar, and separately beat the yolks with the remaining sugar.
Carefully fold the egg white mixture into the yolk mixture, mix until smooth, and gradually add the sifted flour, vanilla, and baking powder. Divide the sponge cake batter into two portions and add red food coloring to one portion.
Pour the batter onto a greased baking sheet, pour the colored batter on top, and bake the sponge cake in a hot oven (200°C). Do not open the oven door after the sponge cake has risen, then reduce the temperature to 170°C. Check for doneness with a toothpick. Divide the sponge cake into two portions and soak them in the strawberry syrup.
Prepare the cream: Whip the cold heavy cream with powdered sugar until fluffy and refrigerate. Separately, whisk together the condensed milk, melted chocolate, and diced banana.
Soak the gelatin in warm water for 30 minutes (follow the instructions on the gelatin package, as gelatin varies). Heat the swollen gelatin to approximately 70°C in a double boiler until the solution is smooth, then cool to room temperature.
Add a few drops of yellow food coloring to the cream, and whisk in the gelatin solution. Combine the cream with the whipped cream, stirring gently. The cream is ready and will set in the refrigerator for a few hours, so spread it immediately between the sponge layers and pour a small amount on top, then let it set in the refrigerator for a couple of hours.
Fresh the top layer with the cheesecake icing (whip the mascarpone cheese with powdered sugar, add the cream, and whisk again). Mix some of the icing with the food coloring and apply a design using a disposable syringe.
