Ingredients
For the base:
Shortbread cookies 175g
Butter 50g
For the filling:
White chocolate 200g
Cream cheese 300g
Sour cream 200g
Strawberries 225g
Crush the cookies into crumbs and mix with softened butter. Press the mixture tightly into the bottom and up the sides of a 20cm round springform pan. Refrigerate.
Melt the chocolate in a double boiler or microwave. Beat the cheese and sour cream until thick and smooth. Add the sliced strawberries and mix with the melted white chocolate and cream cheese. Pour the mixture into the prepared pan. Smooth it out and refrigerate for about 4 hours to set.
