Chocolate and Oatmeal Parfait



Ingredients
Oatmeal 1 cup
Water 2 cups
Coconut milk 2 tbsp
Water 2 tbsp
Dark chocolate 120 g
Vanilla 1 tsp
Instant coffee 1/4 tsp
Pinch of salt

Toast the oats in the oven for a few minutes and then cool completely. Then grind them to a powder, combine with the remaining ingredients (except 60 g of chocolate and 2 tablespoons of coconut milk) in a saucepan, and place over low heat.

Bring to a simmer over low heat, stirring occasionally. Cool for about a minute or two, until the oats are cooked through.

To make the parfait, spoon some of the chocolate "oatmeal" into bowls or glasses. Top with a couple of chocolate chips. Then another layer of "oatmeal" and another chocolate chip.

Layer the ingredients in this manner, with the oatmeal mixture being the last layer. Serve while the oatmeal is still hot, allowing the chocolate to melt. Finally, drizzle with coconut milk and garnish with a chocolate bar. Serve hot.
