Baked Potatoes with Onions and Thyme



Ingredients
Potatoes 2000 g
Butter 50 g
Vegetable oil 3 tbsp
Salt
Red pepper flakes 1 tsp
Onions 4 pcs
Thyme 4 sprigs

Preheat oven to 190°C. Melt the butter in the microwave or in a small bowl on the stovetop, then combine it with the vegetable oil.

Peel the potatoes and slice them as thinly as possible using a grater or a sharp knife. Grease the bottom and sides of a 22–25 cm baking dish with a mixture of butter and vegetable oil (~1 tbsp) and place the sliced potatoes inside, as shown (arrange the potato slices vertically).

 Peel the onions and slice them into thin rings. Carefully insert the onion rings between the potato slices. Add red pepper flakes and two pinches of salt to the butter and vegetable oil mixture. Brush the dish with this mixture. Season with salt.

Bake the potatoes for about 1 hour and 15 minutes, then remove the dish, top with thyme sprigs, and bake for another 35 minutes, until tender (the potatoes should be crispy). If the potatoes start to burn on top, cover them with foil. Serve hot with sour cream or cream and bacon bits.
