Ingredients
Water 1.5 cups
Potatoes 6
Celery (stalks) 2
Water 1/4 cup
Milk 1 cup
Salt 3/4 tsp
Ground white pepper 3/4 tsp
Green onions 2 stalks
Dice the potatoes and cut the celery into pieces. Bring 1.5 cups of water to a boil. Add the potatoes and celery, cover, and bring to a boil again. Reduce heat and simmer until the potatoes are tender (about 20 minutes).
Pour the liquid into a blender, adding 3 cups of cooked vegetables and 1/4 cup of water. Cover and blend until smooth (1 minute).
Return the vegetable puree to the pan with the remaining vegetables (potatoes and celery). Add the remaining ingredients and heat through, stirring occasionally.
Ladle into bowls, garnishing with herbs.
