Carrot and Apple Soup



Ingredients
6 carrots
1 onion
1 leek
10 g ginger
3 cloves garlic
1 apple
30 ml olive oil
Green onions

The main ingredients are the apples and carrots. Wash them thoroughly and peel them with a vegetable peeler. Simply peel off a thin layer of skin. Next, cut the apples into small cubes and then cut the carrots into small pieces.

Next, chop the onion and celery. Also, cut the ginger into thin strips—it always adds a unique aroma and flavor.

Now, lightly fry the onion in vegetable oil in a saucepan and then add the ginger. Mix everything together and then add the ginger and garlic. Meanwhile, bring the broth to a boil in a separate saucepan.

Next, place the carrots and apples in the saucepan and pour in the broth. Now simmer the soup until the carrots and apples are soft.

Purse the cooled soup in a blender. Use a metal attachment if the soup is still hot. For a smoother texture, strain the soup through a small metal sieve. Then, transfer it to a bowl.

Now you can simply garnish everything with green onions, or simply sprinkle them in the center; the soup no longer needs any garnish.
