Spicy Potato Soup with Shrimp



Ingredients
Potatoes 500 g
Onion 1
Garlic 2 cloves
Red chili pepper 1
Ginger 30 g
Vegetable oil 4 tbsp
Turmeric 1/2 tsp
Chicken broth 900 ml
Shrimp 250 g
Sesame oil 1 tsp
Curry powder 1/4 tsp
Coriander 2 tbsp
Parsley 2 tbsp

Peel and finely chop the potatoes, onion, garlic, and ginger, and grate the ginger. Cut the hot pepper in half and remove the seeds. If you don't like spicy food, you can omit the red pepper. Or add it to taste.

 Fry the onion, garlic, pepper, and ginger in 3 tablespoons of vegetable oil. Add turmeric and curry powder and cook for 3-4 minutes. Add the potatoes and cook for a couple more minutes, stirring occasionally. Pour in 300 ml of broth and simmer for 20 minutes, until the potatoes are tender.

Remove the peppers from the broth and puree the soup, adding the remaining chicken broth. Return the pan to the stove, add the shrimp, sesame oil, and cook for 2 minutes. Sprinkle the soup with herbs.
