Mushroom Soup with Meatballs



Ingredients
Minced meat 300 g
Mushrooms 400 g
Potatoes 4
Onion 1
Carrot 1
Egg
Herbs to taste
Spices to taste
Garlic to taste

To make the meatballs, mix one egg, salt, pepper, crushed garlic, and chopped herbs with the minced meat. Mix thoroughly, then refrigerate for 10 minutes.

Wash the mushrooms thoroughly and slice them. Cut the potatoes and carrots into strips, and the onion into half rings.

Remove the minced meat from the refrigerator and make about 20 meatballs. Fry them in vegetable oil in a saucepan until golden brown. Heat on medium heat.

 Remove the meatballs to a plate and fry the vegetables in the same oil. After 5 minutes, add the sliced mushrooms to the carrots and onions. Sauté for another 5 minutes. Add 1.5-2 liters of water and the potatoes to the pot and bring the soup to a boil. Then add pepper, salt, and spices to taste. Reduce the heat, cover, and simmer for another 15 minutes.

When the potatoes are cooked, add the meatballs to the soup. Simmer the soup with the meatballs and mushrooms for no more than 5 minutes. Serve with herbs and season with sour cream.

You can serve this mushroom soup with meatballs with cilantro. This seasoning is ideal for soup with meat and mushrooms. However, it has a unique flavor that may not be to everyone's taste. In this case, replace the cilantro with parsley and dill.

 You can also add broccoli to the mushroom and meatball soup. You'll need about half a head of broccoli per dish. Add it to the soup, just like the meatballs, at the very end.
