Baked Apples with Walnuts


Ingredients
Walnuts 35g
Pecans 35g
Brown Sugar 1 tsp
Salt 1/2 tsp
Cinnamon 1/4 tsp
Cardamom 1/4 tsp
Oatmeal 1/4 cup
Butter 4 tbsp
Apples 6
Cider 1.5 cups
Vanilla Ice Cream

Preheat oven to 175°C. In a medium bowl, combine the nuts, sugar, salt, spices, and rolled oats. Add the cold, chopped kibochus and mix until smooth. Cut the apple caps off and scoop out the cores.

Stuff the apples with the mixture. Transfer the apples to a baking dish. Pour the cider into the dish to allow the apples to sit. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for another 30-45 minutes, turning the dish every 15 minutes to ensure even baking. Serve the apples with vanilla ice cream. Drizzle with the baking juices.
